It’s Leeks I Seek…

Strange request time – does anyone have any good Leek recipes or dishes? I’ve recently gone all Earth Mother, and signed up for a fortnightly order of organic veg. It turned up, and I was thrilled that I could actually identify all the veggie varieties inside – including a batch of fine-looking leeks. There’s just one problem. I’ve never cooked leeks before, in any way, shape or form, and have absolutely no idea what to do with them. So if anyone has any ideas, hints, suggestions, please let me know!!!

    Hi Jacqui – right, leek ideas. SO you can use them like onions. Just chop them up finely and use in stews or chicken casseroles etc. Or, to have them as a vegetable, the way I do them most often is to just chop them into 2cm (ish)long chunks (so that they stay in their rings) and soften them in butter, celery salt and a splash of white wine. COok them until they’re soft but not completely lost their shape. You could also cut them into slightly longer lengths, stand them upright in a roasting dish, dot with butt and again perhaps some wine, cover with foil and roast them till they’re soft.

    OR simply cut into rings and steam along with other veg like broccoli, peas etc.

  2. oooo, yummy! Now I am no Jamie Oliver, but I do follow his every move. His chicken and leek pie is just what you need on an autumn day. I often quickly steam chopped leeks to soften them and then pan fry them in a little olive oil and a knob of butter, with some courgettes (or cavalero cabbage, currently in season)

  3. i love leeks with a sunday dinner normaly steamed with the other veg. But one of my favourites at the mo (not very healthy tho) is roasted butter nut squash its lovely chopped up into large peices roasted along side of carrots and roasties…. amazing! ruined my diet but amazing!

Leek and potato soup.Saute leeks and one onion with some salt and pepper and some diced potatoes, add chicken or veg stock, and simmer for about 30 mins(or until potatoes are tender),add a little bit of milk or cream towards the end, and then blend.Yummy with some grated cheese on top and french bread!

  7. Leek update: So far I’ve tried the chicken and leek pie. Not only was it edible (my first pleasant surprise) but really yummy! Maybe I can do this cooking lark after all…
