I love salmon. Baked, poached, smoked, or raw atop of sushi. I even love it *whispers* from a tin. There – I said it. And you know what? I don’t care who hears it. Tinned salmon tastes good.
To prove it to all you lot, the team behind Princes Wild Alaskan Salmon set me a little fishy challenge – come up with a scrummy recipe, using tinned salmon. So I did.
Here are the ingredients for my very own Salmon, Corn, and Red Pepper fritters…
1 x tin of Princes Wild Alaskan Salmon
1/2 Red Pepper
1/2 Red Onion
Handful of frozen sweetcorn
1 x egg (beaten)
1 x tbsp melted unsalted butter
sprinkle of salt
1/2 cup fresh breadcrumbs
