
We’ve made a conscious decision to eat less red meat in our household (sure, a few bacon butties and rib-eye steaks might slip through the net every now and then…).
It’s for health reasons mostly, but I also found I went off red meat a bit when I was pregnant, and never really felt the same about it afterwards.
Which is all well and good, but it left a hole in my weekly meal planning (which makes it sound like I’m organised enough to have an ACTUAL meal plan, which I don’t. What I mean is I’m struggling to think of enough simple, tasty non-meat dishes to last the whole week).
So imagine my excitement to be named a ‘Fish Fanatic’, by the lovely ladies behind the Love Seafood website. Not only would I get some fab fish to try out, but they’d send me the recipes and cooking instructions too.
Perfect, since I LOVE fish but I’m not confident cooking it.
Turns out I was worrying over nothing; I received my first fish pack late last week – individually vacuum-packed (use only what you need, and freeze the rest – no wastage!), with a simple recipe – pan-fried haddock with beans and almonds.
Yum.
It sounded like something I’d order from a fancy restaurant, and I was quite sure I’d stuff it up. So, did I? See for yourself:


First I dusted the haddock fillets in flour, then blanched the French beans and set them to one side.
Next I pan-fried the fish in a tablespoon of oil until the flesh turned opaque. I removed the fillets and kept them in the oven on a low heat to keep them warm, then threw 80 grams of butter into the pan to brown. I added the beans (chopped in half) and 10grams of chopped almonds.


To finish, I plated up the haddock fillets, and poured the bean and almond mixture over the top.
Ta dah! Delicious haddock with beans and almonds.
I know what you’re thinking, and the answer is yes – it did taste every bit as good as it looks. And I’ve got enough haddock left over make some scrummy Fish is the Dish kids’ goujons. I’ll let you know how those go too.

Midlife Single Mum: My OH is exactly the same, but it didn’t taste ‘fishy’ at alI think (could be wrong here) that the fresher the fish, the less fishy it smells and tastes anyway! x

Susan: Isn’t it yum???? I was surprised how much better the good-quality, fresh fish tasted. I’d only really cooked frozen fish before. Will def order more straight from the fishmonger from now on. x
We had a similar recipe too and it was so good. I never ate cooked fish (just raw) before Fish is the Dish converted me 🙂
