
Easter has come and gone, but that doesn’t mean the chocolate love has to end – far from it!
In fact, now is the PERFECT time to snap up some bargains as retailers clear the shelves of their seasonal confectionery. Make the most of the half-price chocolate goodies and breathe new life into your old eggs with these delicious ideas on what to do with uneaten Easter eggs.
WHAT TO DO WITH LEFTOVER EASTER EGGS
CHOCOLATE EGG BANANA SPLIT
Carefully break open one of your hollow leftover Easter eggs, keeping one side intact. Use that half as a bowl and fill with scoops of vanilla ice cream, a dollop of cream and slices of fresh banana. Take the other side and crumble or grate it over the top. Enjoy!
MINI-EGG CHEESECAKE

Prepare a cheesecake (baked or no-baked, big or small – it’s up to you!). Decorate the top with a few whole mini eggs, then crush another and scatter the candied fragments over the top .
CREME EGG BROWNIES

Prepare your favourite chocolate brownie batter and part-bake it for 20 minutes. Remove from the oven, cut your Creme Eggs in half lengthways, and gently press them into the batter. Bake for a further 20 minutes until top is firm, but the middle remains soft, and the leftover Easter eggs are deliciously gooey.
MELTED CHOCOLATE MOULDS
Gather your leftover Easter goodies, break them into bits and microwave slowly, or melt them in a heatproof bowl over a saucepan of gently boiling water. Pour the mixture into a silicon spoon mould (search on Amazon) and let it set, then pop a spoon in your hot chocolate for extra creaminess, or stir into your coffee for a mochaccino twist.
EASTER BARK

Melt your solid and hollow leftover Easter eggs, keeping milk and white chocolate separate. Spread the milk chocolate to fill the base of a greased tray, then melt and drizzle the white chocolate to created a swirly pattern on top.
Tear marshmallow eggs into tiny chunks and scatter throughout the mixture, then add mini caramel eggs, and whole and broken candied eggs. Allow to set, and break up to share.
